Chef's Tasting Menu
The Chef’s Tasting Menu is served from Tuesday to Saturday, from 12:00 to 22:00. The last service is at 20:00.
All still wines at the winepairing are biodynamic Demeter-certified and organic.
1. Celery, apple, hazelnut and vegetable sorbet
2. Terrine of Zupan Lake Trout. pickled kohlrabi
(spinach, white strawberry, rose, dandelion, apple)
3. Žlikrofi with Crayfish. Carniolan-style crayfish soup
(Golar yogurt and whey, wood sorrel)
4. Drežnica Kid Goat from Žvanč Farm, savoy cabbage
(young onion and asparagus on smoked butter)
5. Fillet of Zupan Rainbow Trout
(morels, wild garlic, Darja’s barley)
6. Sweetbreds with porcini mushrooms and egg
7. Bandeljc with Herbs*, leek sauce, sour cream ice cream
(*dish from the first cookbook in the Slovenian language, V. Vodnik, 1799)
